In reply to Angela. Hi Angela, thank you for stopping by and asking your excellent questions. You can substitute kamut or spelt 1:1 for the whole wheat flour. I wouldn't substitute any of the all purpose flour. These are excellent flour choices and work great in 50% of the total flour. Using grated apple for the applesauce would work great using either of these flour choices too. Grate it and put it in a bowl prior to adding it to the other ingredients to see how much juice you get. If it's a lot you may want to lightly drain it or dot it with a paper towel. I love trying new things and hope you'll stop by and let me know what you do and how it works.

I was looking for a recipe that called for applesauce and your recipe came up. I looks delicious – would I be able to substitute grated apple for applesauce and get the same results? Also, could I substitute the whole wheat flour for either Kamut or Spelt flour? I am not a baker, so I’m really bad at judging substitutions (I’ve had to throw out some of my “creations” :-0
