This was an excellent recipe and enjoyed by 6 of us last night after dinner! I used Bacardi Gold rum and cut back a half a cup of sugar altogether bc the bananas were extra extra ripe. The quality of the rum makes a difference. Don’t go cheap or it will taste bad. This cake smells wonderful and looks beautiful. Thank you for this amazing recipe.

In reply to Sarah. Either one of those issues could have caused it to harden quickly. It will also set up quickly as it cools. If you haven't applied it try heating it up with a little water slowly to thin it down.

My glazed hardened too quickly. Do you think I cooked it for too long or the heat was too high?
