I love this Olivia! You can reduce it or even eliminate it. A 1/2 cup of unsweetened applesauce could add a little sweetness and soften the muffins too. And you can bake this in a mini muffin pan for little hands too. Just start watching it about 5 minutes sooner. Be sure to stop back and tell me how it goes.

Do you think reducing the sugar down to 1/4 cup would affect how it bakes? My toddler loves muffins but I don't love all the ingredients in the packaged ones. Looking for an alternative to bake up for him, but would like to decrease the sugar a little?

It sounds like the heat is too high. I'd definitely lower it. My first instinct is to 375. Turn the pan half way through and monitor it with a toothpick for doneness.

Just wondering if the temperature should be 350 instead of 400. I’ve made these twice and they are very dark on the sides. I bought a new thermometer and tried two different pans, with no change

I haven't made these without eggs, but the sub would be to make a flax egg (1 T flax mixed with 2 T water left to sit for 5 minutes). If you try it, please let me know how it came out. Thank you!
