Growing up, nothing went to waste. My grandmother canned anything that could be forced into a jar. She had a large room in her basement that we referred to as the fruit cellar. It was scary going down there, and sometimes scary trying to figure out what was in those jars! I think it could have been haunted too. Well maybe not, but I always felt like something was chasing me back up the stairs! Creeped me out!
I buy a lot of fruit and vegetables from a membership warehouse. I can’t always get through a large bag of produce, but don’t want it to go to waste. I generally will just chop them up and put them in a plastic bag for soup or casseroles.
I got a VitaMix as a gift from my husband John. John says it’s one of the best gifts he has ever benefited from. I make him smoothies and often use a lot of the fruit that I have frozen. I decided to use it to finely chop up some vegetables that wasn’t going to keep.
I went to the dollar store and purchased some ice cube trays. I filled these trays with the veggies. Once frozen, I popped them all into a freezer bag. Each cube is 2 Tablespoons which is the perfect size to add to smoothies, dips, or I can add a few more when making a recipe that starts with a mirepoix (chopped celery, carrots and onion).
Well, I was so proud of myself, I now use them in the kitchen for…
- Squeeze up some lemon or limes. Margaritas anyone?
- Fresh herbs. I just cover them with a bit of water to bind them together. Great for soup, and much better than dry.
- Leftover coffee for those yummy lattes.
- Juices such as tomato for a Bloody Mary or orange juice for a Mimosa? I’m getting thirsty!
