Made this last night with a small pork loin. Was looking for something hands off and this was perfect. I didnt even cut the loin, just shredded it afterward. Used some green enchilada sauce I had on hand instead of the chiles, and added a peeled, diced sweet potato to the mix with the hopes of a hiding another vegetable in the meal(worked! practically disintegrated and thickened the sauce). The beans cooked perfectly–not overly done. The flavors were great for both a toddler to enjoy and for us adults to add heat to. Thanks for the recipe and inspiration!
