Hi Joy. Great question. If you&#039;ve been feeding your starter regularly, it should be ready 6 to 8 hours from when you fed it last. So if you want to make your sponge around 9 or 10, you&#039;ll want to feed your starter around 2 or 3 pm. To get 1-1/2 cups of bubbly starter feed it with 185 grams of water and 185 grams of flour (50/50 mix). This will allow you to have about 70 grams left over to maintain your starter.]]></description>
