3 Cheese Asparagus Crustless Quiche is an easy dish to put together and is perfect for company or any meal of the day. It's a snap to put together and easy to customize to your tastes.
Preheat oven to 350 °F. Coat a 9-inch pie plate with non-stick cooking spray.
Trim the tough ends from the asparagus and cut into 1-inch pieces and dice the onion.Note: Asparagus and onion can be quickly sauteed and then patted dry before adding them to the remaining ingredients to prevent a soggy quiche. Or, it can be added raw which I often do.
In a separate bowl, whisk eggs until smooth. Add the milk, Gruyere Cheese, Parmesan cheese, onion, and asparagus. Stir until combined.
Pour into the prepared pie plate and bake for 40 minutes and check for doneness by inserting a knife in the center - it should come out clean when the quiche is fully cooked. Remove from the oven and sprinkle with Mozzarella cheese. Return to the oven and bake for an additional 4 minutes or until the cheese is melted.
Let the quiche cool for 5 to 10 minutes before cutting and serving.
Store covered in the refrigerator for up to 4 days.

For best results, use fresh asparagus rather than frozen.
Make sure all ingredients are at room temperature for even cooking.
This quiche can be made ahead and reheated when needed.
To make in a 9x13 inch pan: Double all ingredients and increase baking time to 45-55 minutes. Check for doneness by inserting a knife in the center - it should come out clean when the quiche is fully cooked.
