Fruit Salsa with Cinnamon Sugar Tortilla Chips

Fruit Salsa

  • 2 nectarines fresh, diced
  • 2 cups strawberries (or your choice of fruit such as grapes, kiwi, plums etc.)
  • 1 1/2 tsp minced jalapeno (seeds and ribs removed)
  • 1/2 tsp lemon juice
  • 1 tsp honey
  • 2 tbsp cilantro chopped
  • 1 tsp powdered sugar

Cinnamon Sugar Tortilla Chips

  • 6-8 tortilla shells (flour, corn, or your choice)
  • 1/4 cup sugar 
  • 1 tsp cinnamon
  • Cooking Spray


Fruit Salsa

  • Fold all ingredients together and refrigerate until use.

Cinnamon Sugar Tortilla Chips

  • Preheat oven to 350°F Cover two rimmed baking sheets with parchment paper. 
  • Spray both sides of each tortilla with butter or canola cooking spray. Sprinkle cinnamon sugar mixture on both sides of each tortilla. Cut a few tortillas at a time into 8ths. 
  • Place on baking sheets and bake 8-10 minutes until lightly browned. Allow to cool and serve with fruit salsa.
