Ingredients
6ozspicy ground sausage
3ozcanadian bacondiced
1yellow oniondiced
3garlic cloves
1red bell pepperdiced
7eggs
1/2cupmilk
120 oz bag frozen shredded hashbrowns, thawed
2cupsshredded cheesecheddar or mozzarella, divided

Instructions
Preheat the oven to 375 degrees F. Spray a 9 x 13 inch baking dish with non-stick cooking spray.
Brown sausage over a medium-high heat. Remove meat to a large bowl. Discard all but 1 tablespoon grease.
Add the onion and red pepper to the pan and saute for 5 minutes or until cooked. Add the garlic and saute for an additional 2 minutes. Pour the vegetable mixture into the mixing bowl with the sausage and add diced canadian bacon, hashbrowns and 1-1/2 cups of cheese. Stir to combine.
In a separate bowl, whisk eggs, milk, salt and pepper together. Add to hashbrown mixture and stir to combine.
Pour into the baking dish, and top with remaining 1/2 cup of cheese. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes or until the casserole has started to brown.
Remove from the oven and allow to rest for 5 minutes. Top with green onions if desired.
