Instructions
Preheat the oven to 350 °F. *Line an 8x8 baking dish with parchment paper.
Using a large mixing bowl, melt the butter in the microwave (or stove top). Add the peanut butter and stir until smooth. Add the brown sugar, eggs, and vanilla, Stir until combined.
Using a medium-sized mixing bowl, combine the flour, baking soda, cornstarch, and salt. Whisk until combined.
Add the dry ingredients to the wet ingredients. The batter will be thick like cookie dough, Fold in the chocolate chips.
Spread the batter in the prepared baking dish. Top with additional chocolate chips if desired. Bake for 25 to 30 minutes or until the bars are just done in the center.
Remove from the oven and cool on a cooling rack. Remove the blondies from the baking dish by lifting the parchment paper. Cut into 12 to 16 pieces.
Notes
*I spray the baking dish before adding the parchment paper which makes the parchment paper stick to the dish and assures that it comes up easily after baking. If you like gooier blondies bake for 20 to 25 minutes. If you like a firmer blondie bake for 30 minutes. You may have to cover the blondies to keep them from getting too brown.Popular variations include replacing the chocolate chips with crushed candy bars or M&M's. 1/3 to 1/2 cup of nuts such as walnuts or pecans can also be added.Original recipe was created by Sue Bee Homeaker.
