Corned Beef Au Gratin Potatoes

This Corned Beef Au Gratin Recipe is a great way to use up all the meat and stretch your dollar while also enjoying every last bite!

INGREDIENTS

– Potatoes – Cheddar Cheese – Gouda Cheese – Heavy cream – Corned beef brisket

STEP 1

In a large Dutch oven, melt the butter and whisk in the flour to make a roux. Now add cream and whisk until thickened.

STEP 2

Add the sliced potatoes and cook for fifteen minutes over a medium-high heat.

STEP 3

Add the gouda cheese, half of the cheddar cheese, and the diced corned beef. Stir to combine.

Pour all of the ingredients into the casserole dish. Top with remaining cheddar cheese.

Bake for 25 minutes uncovered or until the potatoes are cooked.
