Turmeric Chicken with Wild Rice

Turmeric Chicken is a quick and easy dish that is just as healthy as it is delicious!

Ingredients

  • 1 cup wild rice
  • 1 lb ground chicken
  • 1/2 cup diced red pepper
  • 1/2 cup thinly sliced celery
  • 1/2 cup diced onion
  • 14.5 oz can of diced fire-roasted tomatoes
  • 1 tsp dried oregano
  • 2 tsp turmeric
  • 2 tsp salt
  • 1/4 tsp ground pepper
  • 2 tbl olive oil
  • 1/4 cup fresh parsley chopped

Instructions

  • Cook the wild rice according to package directions.
  • In a large skillet, add olive oil. Cook ground chicken, onion, red pepper, and celery together until chicken is cooked through. Add tomatoes, oregano, turmeric, cooked rice, salt, and pepper. Garnish with chopped parsley. Serve
