In a large skillet, add olive oil. Cook ground chicken, onion, red pepper, and celery together until chicken is cooked through.
Add the canned tomatoes, oregano, turmeric, cooked rice, salt, and pepper to the cooked chicken mixture. Garnish with chopped parsley if desired and serve.
