Raspberry Daiquiri Pie and Pudding Recipe

If you love a good Daiquiri and a delicious creamy pie, you're going to love this Raspberry Daiquiri Pie.  Don't want to mess with a crust?  The filling makes a delicious pudding dessert!

Ingredients

  • 8 oz cream cheese softened to room temperature
  • 14 oz sweetened condensed milk
  • 6 oz frozen limeade concentrate thawed
  • 1/3 cup light rum
  • 8 oz Whipped topping I used Cool Whip
  • 1 tbsp raspberry preserves
  • *baked pastry shell

Optional Garnish: additional whipped topping and raspberries.

    Instructions

    • In the bowl of an electric stand mixer, beat cream cheese until light and fluffy.  Add sweetened condensed milk, limeade, and preserves.  Beat until blended.  Add rum and mix thoroughly.
    • Fold in whipped topping and pour into pie crusts or pudding cups.  Chill for 4 to 6 hours until firm.
    • Garnish with whipped cream and raspberries if desired.

    Notes

    This recipe makes 2 pies or 1 pie and 6 pudding cups or tarts.  You can use pastry pie crusts or graham cracker crusts too.  Calorie count doesn't include crust.
    Prep time doesn't include chill time of 4 to 6 hours.
