Ingredients
7Peaches*skinned and pits removed
1lemonjuiced
3/4cupsugar
Instructions
You can skin the peaches before or after you cook them. Cut them in half and remove the pit. Cover the bottom of a deep-sided pan with about 1 inch of water. Add the peaches and allow to simmer over medium heat until softened, approximately 20 minutes. You don't want to boil them.
Peaches are too fibrous to pass through a sieve so add them to a blender, food processor, or stick immersion blender. Process them until smooth.
Return them to the heat and add lemon juice and sugar. Heat until sugar is dissolved, approximately 10 minutes.
Notes
You can make as much or as little of this sauce at a time. If your peaches are really sweet you may not add as much sugar. I also choose to blend it smooth. You can make it chunky if that's what you prefer.
