Have you ever had a Crumbl Sugar Cookie? If not, I encourage you to go preheat the oven. These delicious, melt-in-your-mouth cookies are soft, tender, and so quick and easy to make. And, in my humble opinion, life-changing!
Preheat the oven to 350 °F. Line baking sheets with parchment paper or a silicone mat.
Combine the butter and sugar in the bowl of an electric stand mixer fitted with the paddle attachment. Scrape down the sides when necessary. Beat on medium-high until light and fluffy.
Add the eggs one at a time, beating about 1 minute after each addition.
Add the vanilla and almond extract and mix until combined.
In a separate bowl, whisk the flour and the baking powder together. Add the dry ingredients to the creamy mixture one tablespoon at a time with the mixer on low until all of the flour mixture is added and no dry flour is visible, scraping down the sides as necessary. Cookie dough will be soft and easily scoopable.
This recipe doesn't need to be chilled. Using a 3 tablespoon scoop (or a 1/4 (cup measuring cup) scoop the dough and shape it into a ball. You want a little dough overhang on the scoop which is what gives it that rustic edge.
Put 6 cookie balls to a baking sheet. Did the bottom of a glass or the bottom of a flat measuring cup, and press down on the cookies to flatten them slightly. Don't press them too thin.
Bake for 9 to 11 minutes or until the cookies no longer look glossy and are puffed up. They will set as they cool on the cookie sheet.
Almond Buttercream Frosting
Whip the butter on medium-high until light and fluffy using an electric mixer. Turn the mixer to low and add the powdered sugar one tablespoon at a time until completely incorporated. Add the extract and 2 to 3 drops of food coloring blending to mix. Add the cream one tablespoon at a time and once incorporated, turn the mixer on medium-high and whip for 2 to 3 minutes or until light and fluffy.
Spread the frosting onto the cooled cookies.
Notes
If you don't have or like Almond Extract, increase the Vanilla Extract by 1/2 teaspoon.You can make smaller cookies but bake for only 6 to 7 minutes.
