Preheat the oven to 400 °F and line a baking sheet with parchment paper or a silicone baking mat.
Using a large bowl, whisk the flour, sugar, baking powder, cream of tartar, and salt together.
Dice the cold butter and add it to the dry ingredients. Using a pastry cutter or fork, cut the butter into the flour until it is crumbly.
Add the buttermilk. Fold the ingredients together until combined.
Using a scoop or tablespoon, drop dough onto the prepared baking sheet.
Make the honey butter by combining the melted butter and honey. Brush the mixture over the dropped biscuits.
Bake 10 to 12 minutes or until the edges are golden brown.
Brush additional honey butter glaze to the baked biscuits.
Notes
If you use salted butter, eliminate the additional salt in the recipe.Use a pastry cutter or to forks to work in the butter. Don't use your hands. The heat from your hands will warm the butter and your biscuits will not be fluffy.
