Honey Harvest Granola with Dried Fruit

Honey Harvest Granola with Dried Fruit tastes like a fall orchard. It's full of fiber and good for you ingredients. Best of all, it's delicious!

  • 2-1/2 cups rolled oats not quick cook
  • 1/4 cup diced mission figs
  • 1/4 cup diced unsweetened dried apple rings
  • 1/4 cup diced unsweetened dried peach slices
  • 1/4 cup dried tart cherries sliced if large
  • 1/4 cup raw sunflower seeds
  • 1/4 cup pepitas
  • 1/2 cup chopped walnuts
  • 2 Tablespoons ground flax seed
  • 1 teaspoon apple pie spice
  • 1/4 cup packed brown sugar
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1 Tablespoon Vanilla


  • Preheat oven to 350°F. Line a rimmed baking sheet with foil and spray with non-stick cooking spray.
  • Combine coconut oil and honey in small saucepan; bring to a simmer over medium heat. Remove from heat; stir in vanilla.
  • In a large bowl combine remaining ingredients. Pour warm liquid over the dried fruit mixture and stir well.
  • Spread granola on prepared baking sheet. Bake for about 25-30 minutes, or until golden brown, stirring halfway through cooking.
  • Transfer sheet to a rack and let granola cool completely. (If it is not cooled completely it will not clump - DO NOT SKIP THIS STEP!!)
  • Store in airtight container. May be frozen.
