Ingredients
Batter
2 1/3cupsall-purpose flour
1 1/4teaspoonsbaking powder
1/2teaspoonsalt
3/4cupunsalted buttersoftened
1 1/4cupsgranulated sugar
1/2cuplight brown sugarpacked
3large eggs
1teaspoonpure vanilla extract
Filling
1tablespoongranulated sugar
1tablespooncinnamon or pumpkin pie spice
Glaze
1cuppowdered sugarsifted
1 to 2tablespoonsmilk
1/4teaspoonpure vanilla extract
Instructions
Preheat oven to 350° degrees F. Spray the bottom of a 9X13 inch baking pan with non-stick cooking spray and then line with parchment paper.
In a medium bowl, combine the flour, baking powder, and salt. Whisk to combine and set aside.
In the bowl of a stand mixer fitted with the paddle attachment, beat butter on medium speed for 2 minutes. Add in sugars and beat for an additional 2 minutes. Add in eggs and vanilla and mix until thoroughly combined. Turn the mixer to low and add the dry ingredients, mixing until just combined.
Spoon half of the batter into the pan and spread evenly. In a small bowl, stir together the sugar and pumpkin pie spice or cinnamon. Sprinkle evenly over the batter.
Spoon a teaspoon-sized amount of the remaining batter evenly over the pumpkin pie spice mixture.
Bake for 20 to 25 minutes or until lightly golden brown and a toothpick inserted into the center comes out clean. Cool completely.
In a small bowl, whisk together the powdered sugar, milk, and vanilla until smooth. Drizzle the glaze over the bars using a spoon or fork.
