Easy Healthy Cilantro Lime Shrimp

Cilantro Lime Shrimp is a great appetizer or meal. It's quick and easy to make and delicious to eat!

Ingredients

  • 1 lb raw shrimp cleaned and deveined
  • 1 tsp cumin ground
  • 1/4 tsp cayenne pepper ground
  • 1/4 tsp garlic powder
  • 1/4 cup cilantro chopped
  • 1 lime juiced
  • 1/4 tsp salt
  • 1/4 tsp pepper ground
  • 1 tbsp olive oil extra virgin

Instructions

  • Preheat oven to 400F° and place a cooling rack on a baking sheet.  Spray the rack with non-stick cooking spray.
  • In a medium-sized bowl, drizzle raw shrimp with olive oil until they are lightly coated. Add cumin, cayenne, garlic powder, and salt and pepper. Mix until coated.
  • Lay shrimp on the prepared rack. Bake undisturbed for 8 to 10 minutes. Don't overcook.
  • Allow shrimp to cool slightly.   Place on a serving tray or bowl. Coat with lime juice and fresh cilantro.  Serve immediately or cover and refrigerate.

Notes

I serve shrimp cold.
