Ingredients
8ouncesCream Cheesesoftened
8ozSour Cream
½tspPaprika
30.50oz Canned corn(2-15.25 ounce cans), drained
4ozChopped Green Chiles
½ Red Bell Pepperfinely diced
½Red Onionfinely diced
1cloveGarlicminced
½cupGreen Onionsfinely sliced
1cupShredded Monterey Jack Cheese
2cupsShredded Cheddar Cheese(divided)
Instructions
Preheat your oven to 350 °F.
Beat together the cream cheese, sour cream, and paprika in your bowl until fluffy and completely smooth.
Then add in the corn, chiles, chopped bell pepper, onion, garlic, and the green onions to the bowl and stir together.
Add the monterey jack cheese, 1 cup of cheddar cheese and stir again.
Transfer to your cast iron skillet, or a baking dish, add the rest of the cheese evenly on top and bake for 25-30 minutes, then broil for 2-3 on high, or until you have all of the golden/brown spots you desire.
Add more green onions before enjoying hot with some tortilla chips!
Notes
- Store leftovers in an airtight container in the fridge for up to 4-5 days.
- Reheat in the microwave.
