Instructions
In a large mixing bowl, blend the softened neufchatel cheese, parmesan cheese, sour cream, old bay seasoning, and chives together until completely smooth and creamy. Use an electric hand mixer for best results.
Gently examine the crab meat and remove any shell fragments, then fold it into the cheese mixture, being careful not to break up the chunks too much.
Cover the bowl and refrigerate for at least 2 hours to let all the flavors blend together.
Just before serving, transfer to a pretty serving bowl and top with bacon crumbles (or diced fresh bacon) and fresh chives.
Serve immediately with crackers, toasted baguette slices, or fresh vegetables.
Notes
4 to 5 strips of freshly cooked and diced bacon can be used with this dip recipe. Mix in half and garnish with the rest for a delicious variation.This recipe can be prepared up to 2 days in advance and stored covered in the refrigerator.
