Optionally, I will combine the diced onion with the lime juice in a separate bowl before mixing it with the other ingredients. Doing this will take out the intense heat from the onion making it milder.
Slice the avocados in half. Remove the seed and scoop out the flesh into a large bowl. Use a fork or potato masher and break them up into chunks.
Add the diced tomato, onion with the lime juice, garlic, and jalapeno if using it, to the avocados. Stir and add salt and additional lime juice according to taste.
Fold in the cilantro and serve.

We prefer to add the onion to the lime juice, which helps remove some of the intensity of the onion.We also prefer using more cilantro than the average person. Adjust to your liking.Chunky guacamole is easy to eat and visually appealing. You can mash it up to make it creamy if that's what you prefer.
