Holiday Roasted Vegetables With Balsamic And Pecans
Carrots, beets, and Brussels sprouts roast in stages with honey, balsamic vinegar, fresh herbs, and pecans. A colorful side dish for Thanksgiving, Christmas, or a simple dinner any time of year.
Preheat the oven to 400 °F. Place the carrots and beets in a roasting pan large enough to hold the vegetables without crowding.
Mix the olive oil, balsamic vinegar, and honey in a small bowl. Pour the mixture over the carrots and beets. Season with salt and pepper.
Roast for 20 minutes.
Add the Brussels sprouts, garlic cloves, thyme, and rosemary. Stir and roast for 30 minutes more.
Add the pecans and stir. Roast for another 10 minutes, until the vegetables are lightly browned and soft inside.
Remove the herb sprigs. Remove the garlic cloves or serve them whole. Serve warm, with extra salt and pepper at the table.
Notes
Pan size: Use a pan that gives the vegetables room to roast. For a larger batch, use a larger pan or more than one pan.
Beet color: Beet juices may tint other vegetables. Staining is minimal with the carrots and Brussels sprouts in this recipe.
Other vegetables: I sometimes add mushrooms, sliced onions, or leeks. Their roasting time may differ from the vegetables listed in the main recipe.
Leftovers: Store in an airtight container in the refrigerator for up to five days. Briefly warm leftovers in the microwave. These vegetables are best freshly roasted.
