Our Mediterranean Cucumber Tomato Salad with lemon vinaigrette is like summer in a bowl. It makes a tasty side for grilled meats or a light lunch.

Ingredients
Lemon Vinaigrette
½cupolive oil
¼cupfresh lemon juice
2tbspred wine vinegar
2tbsphoney
2tspItalian seasoning
2tspDijon mustard
½tspsalt
¼tspground black pepper
Salad
1red bell pepperdiced
1red onionthinly sliced
Kalamata olivespitted
English cucumberseeded and chopped
cherry tomatoessliced
7ozFeta cheesepacked in liquid, drained, crumbled
Instructions
Slice the red onion and cover it with cold water. Allow it to soak while you prepare the rest of the salad.
Chop the cucumbers and red bell pepper. Add the remaining salad ingredients. Shake the salad dressing and pour it over the salad. You may not use it all.
Refrigerate until serving.
Notes
If you have salad leftover, add fresh tomatoes before serving it again. Top with additional salad dressing if needed.
