Our easy oven roasted broccoli recipe makes an incredible, crispy, golden side dish in 25 minutes. Lemon brightens the dish, and parmesan and toasted pine nuts elevate it to gourmet.
Line a cookie sheet with a silicone mat. Set aside.
Cut the broccoli into bite-sized pieces and place in a large mixing bowl.
Pour the olive oil and the lemon juice over the broccoli.
Using 2 large spoons, toss to coat each piece.
Sprinkle the garlic powder, salt, and pepper over the broccoli. Mix well.
Add the seasoned broccoli to the prepared cookie sheet and spread evenly.
Bake in the preheated oven for 15-18 minutes. The broccoli is ready when it is tender when poking with a fork and lightly browned.
Sprinkle the broccoli with freshly grated cheese and pine nuts.
Notes
Cutting the broccoli: Size matters. Try to keep the broccoli pieces similar in size so they can roast evenly.
After cleaning the broccoli, make sure to completely dry it before seasoning it. Any extra moisture can cause steam instead of roasting.
Don’t overcrowd the pan. Make sure to space the broccoli so it can roast and not steam.
Roasting pine nuts: You can buy roasted pine nuts or raw pine nuts and roast them yourself.
To roast pine nuts: In a small skillet, over medium heat, add the pine nuts and cook for 3-5 minutes, constantly. Once the pine nuts are golden, take them off the heat and place them in a bowl.
For the best flavor and melt, I highly recommend using freshly grated Parmigiano.
If you want to add a fresh and lemony finish, add a small squeeze of lemon juice right before serving.
