– ½ cup shortening (we used butter flavored) – 1 cup sugar – 2 eggs (large, lightly beaten) – ¼ cup milk (we used whole but any variety will work) – 1 tsp baking soda – 1½ cups all-purpose flour – ½ tsp salt – 1 tsp cinnamon – 1 ⅔ cups oats (old-fashioned oats) – 1 cup raisins
Preheat the oven to 375 F, and line muffin tins with cupcake liners.
– Rinse the raisins in hot (not boiling) water and drain. Set aside.
