This easy Buttermilk Pie Recipe has a buttery pie crust filled with silky vanilla custard. It's a simple make-ahead dessert that's beautiful enough for the holidays.
Optional fresh blackberries for topping and decoration.
Instructions
Preheat the oven to 450 °F.
Cover the unbaked pie shell with tinfoil and bake for 8 minutes. Remove the foil (but hold onto it, you’ll need it again) and continue baking for an additional 5 minutes.
Reduce the temperature of the oven to 350 °F.
In a medium saucepan, melt the butter over medium heat.
When melted, remove from heat and add the flour and the sugar and stir to combine. Set aside for now.
In a medium bowl, beat the eggs with an electric mixer on high for 1 minute.
Beat in the buttermilk and vanilla.
Add the egg mixture to the butter mixture into the saucepan and whisk together until smooth.
Pour the filling into the partially baked pie shell and cover loosely with tinfoil. Bake at 350 °F for 45-48 minutes or until the centre of the pie is set.
Chill for 1 hour before serving. Top with fresh blackberries when serving.

Use real buttermilk. Buttermilk substitutes haven't been tested and aren't recommended.
Par-bake the crust before adding the custard filling.
Don't overbake. The filling continues to set as the pie chills.
Store the baked pie covered in the refrigerator.
The pie can be frozen. Thaw it in the refrigerator before serving.
Toppings are optional. This pie is delicious served plain.
