Line a 9x13 baking dish with parchment paper. It is optional, but I highly recommend it. It will help take the sliders out of the baking dish before serving, and make for easy cleanup.
Make the Thousand Island dressing: In a small mixing bowl, whisk the ketchup, mayonnaise, garlic powder, and onion powder. Mix until all ingredients are combined. Set aside.
Make the seasoned butter: In a mixing bowl, add the butter, Dijon mustard, poppyseed, garlic powder, and onion powder. Mix well. Set aside.
Slice the Hawaiian rolls like you would slice a hamburger bun.
Place on a large plate, cut side up, and butter the inside of the rolls.
On the bottom part of the roll,s add 6 slices of cheese.
Add the sliced corned beef on top of the cheese.
Add the sauerkraut evenly on top of the corned beef.
Drizzle the Thousand Island dressing on top of the sauerkraut
Add the remaining 6 slices of cheese and place the top part of the buns on top.
Place the sliders into the prepared baking dish.
Butter the top part of the buns with the seasoned butter.
Bake in the preheated oven for 20-23 minutes or until the cheese is melted to your liking.
Notes
Slice cheese: You can substitute the Swiss cheese with baby Swiss cheese. Baby Swiss cheese is milder and creamier than regular Swiss.
Sauerkraut: Be sure to drain the sauerkraut thoroughly to prevent excess moisture and soggy sliders.
Corned beef: I prefer using thin-sliced corned beef, as it makes the sliders more even and easier to bite. You can also use Deli corned beef
Hawaiian rolls will add the right amount of sweetness, which is a perfect balance between the corned beef and sauerkraut. I add cheese on both sides of the filling, so it helps keep the sandwich together.
Storage: Keep in the refrigerator for up to 3 days.Reheat: Place in a preheated oven at 325 degrees F, covered for 3-4 minutes.Serve at a party, on a platter/tray for your next get together, as a quick appetizer, or make it the star of dinner with other fun finger food.
