Easy Rocky Road Brownies Recipe

Brownie batter

sugar

unsweetened cocoa powder
-measured and then sifted

butter
(unsalted), melted

eggs
(large)

vanilla extract

all-purpose flour

- eliminate if using salted butter

chocolate chips
(dark)
Topping

cups
mini marshmallows
or 1/2 of a 10oz bag

cup
peanuts
(or your favorite nut chopped)

semi-sweet chocolate chips
Drizzle
¼
cup
butter
- melted and slightly cooled
¾
cup
powdered sugar

tbsp
unsweetened cocoa powder
1
tbsp
whipping cream
(can substitute with half and half or milk)
Instructions
Preheat the oven to
350
°F
and spray an 8x8 baking dish with parchment paper and then spray with non-stick cooking spray.
In a large bowl mix salt, sugar, cocoa powder, and flour until combined.
Add in melted butter, eggs, and vanilla, beating until smooth.
Fold in chocolate chips and then spread evenly in the prepared 8x8 pan.
Bake for 30 minutes
Cover the top with mini marshmallows, nuts, and chocolate chips.
Bake 4 to 6 minutes to toast the marshmallows.
In a small bowl mix all ingredients for the drizzle together. Drizzle over warm brownies.
Let cool before cutting.
