Corned Beef Breakfast Casserole Recipe

Give your corned beef leftovers a delicious makeover with this easy-to-make casserole recipe. This hearty casserole is perfect for breakfast or a weeknight dinner.

INGREDIENTS

– corned beef diced – yellow onion diced – garlic cloves minced – green bell pepper diced – eggs – milk

STEP 1

Preheat the oven to 375 °F. Spray a 9 x 13 inch baking dish with non-stick cooking spray. Over medium-high heat, add one tablespoon of oil to a saute pan.

Add the onion and green pepper to the pan and saute for 5 minutes or until softened. Add the garlic and saute for an additional 2 minutes.

STEP 2

In a separate bowl, whisk eggs, milk, salt and pepper together. Add to hash brown mixture and stir to combine. Remove from the oven and allow to rest for 5 minutes.

STEP 3

Top with green onions if desired. Add the vegetable mixture into the mixing bowl with the hash brown mixture. Stir to combine.

STEP 4

In a large mixing bowl, combine the hashbrowns, corned beef, and 1-1/2 cups of the cheddar cheese. Stir to combine. Add the sauteed vegetables and egg mixture. Stir until combined.
