Honey Harvest Granola with Dried Fruit

Honey Harvest  Granola with Dried Fruit tastes like a fall orchard. It's full of fiber  and good for you ingredients. Best of all, it's delicious!

INGREDIENTS

– rolled oats not quick cook – diced mission figs – diced unsweetened dried apple rings – diced unsweetened dried peach slices – dried tart cherries

STEP 1

Preheat oven to 350°F. Line a rimmed baking sheet with foil and spray with non-stick cooking spray. Combine coconut oil and honey in small saucepan; bring to a simmer over medium heat.

Remove from heat; stir in vanilla. In a large bowl combine remaining ingredients. Pour warm liquid over the dried fruit mixture and stir well.

STEP 2

Spread granola on prepared baking sheet. Bake for about 25-30 minutes, or until golden brown, stirring halfway through cooking.

STEP 3

Transfer sheet to a rack and let granola cool completely. Store in airtight container. May be frozen.
