Lemon Orzo Asparagus Salad with Feta Recipe

Asparagus  Orzo Salad is an easy and delicious salad that is made with whole-wheat  orzo, fresh lemon, crisp asparagus, and feta. It makes the perfect  summer dish!

INGREDIENTS

– asparagus cut into one-inch pieces – cooked whole wheat orzo cooked – crumbled feta – flat Italian parsley

STEP 1

Bring a large pot of water to a boil. Add  asparagus and blanch for two minutes. Remove the asparagus with a  slotted spoon to a sieve to stop cooking.

Return the water to a boil, salt the  water, and add the orzo. Cook for 1 to 2 minutes under the suggested  time, approximately 9 minutes. Drain off the pasta water and run it under cool water.

STEP 2

In a large serving bowl, add orzo, asparagus, feta, and parsley. In a small bowl, combine olive oil, zest, lemon juice, salt, pepper, and yogurt.

STEP 3

Whisk to combine and add to orzo pasta salad.  Refrigerate to chill for 1 to 2 hours or serve immediately.
