Sauté the onion and celery in the butter until softened. Set aside.
Crumble the cooled cornbread into a large mixing bowl.
Add the sautéed vegetables, poultry seasoning, sage if using, salt, pepper, chicken broth, and buttermilk.
Mix thoroughly with a wooden spoon or clean hands. The mixture should be thick and visibly moist but not runny or loose.
Grease a 2-quart baking dish with nonstick spray or butter. A 9×13-inch baking dish can also be used.
Spread the dressing mixture evenly in the prepared dish.
Bake for 20 to 25 minutes, or until the top begins to turn golden brown.
