Chocolate Caramel Baileys Mini Cheesecakes

These Chocolate Caramel Baileys Mini Cheesecakes are so creamy and luscious.

INGREDIENTS

– cream cheese – white granulated sugar – large eggs – salt – Baileys – Chocolate shavings

STEP 1

Preheat oven to 350°F. Line a 12 count muffin pan with muffin papers.

Using a food processor, grind cookies into a crumb consistency. Add melted butter and process until the mixture resembles wet sand.

STEP 2

Spoon 1 heaping tablespoon of mixture into the bottom of each cup and press evenly.

STEP 3

Bake for 5 minutes. Allow cheesecakes to cool completely. Meanwhile, using an electric mixer, blend cream cheese and sugar together.

STEP 4

Add salt and eggs, one at a time, mixing between each addition. Add Baileys and mix until blended.
