Creamy Shrimp Pasta with Tomato and Spinach

This simple shrimp pasta dish comes together quickly and makes a great weeknight meal or elegant enough for company.

INGREDIENTS

– Shrimp – Cavatappi Pasta  – Canned Tomatoes – Spinach – Chicken Stock

STEP 1

Dissolve arrowroot powder with chicken stock and whisk to combine.

STEP 2

In a large skillet add chicken stock mixture, canned tomatoes & juice, oregano, garlic powder, salt, and pepper. Bring to a simmer.

STEP 3

Add shrimp to the skillet and cook 5 minutes or until shrimp are pink.

Add cooked pasta and spinach. Stir to combine and let sit a few minutes until spinach wilts.

Serve in bowls and garnish with remaining grated cheese.
