Easy and Healthy Chicken Wild Rice Soup

A delicious, easy and healthy Chicken Wild Rice soup that is low fat and packed with good for you ingredients.

INGREDIENTS

– bone-in split chicken breasts – bone-in chicken leg quarters – carrots divided – celery stalks divided – onions divided – mushrooms

STEP 1

In a 7 to 9-quart dutch oven or stock pot, cover bottom with a thin coating of vegetable oil.

Add 4 diced carrots, 4 diced celery stalks and 1 diced onion. Sauté with chopped mushrooms until they just begin to soften.

STEP 2

Add 3 cloves of minced garlic. Salt and pepper to taste.

STEP 3

Add stock, rice and meat. Simmer until hot.

STEP 4

Store covered in the refrigerator. Soup also freezes well.
