These easy-to-make Apple Cinnamon Muffins are fluffy, airy, and not too sweet but extremely satisfying. They are perfect for breakfast or a quick snack in the afternoon.
– apples – lemon juice – all purpose flour – bleached or unbleached – baking soda – baking powder
Preheat the oven to 350° F. Grease a muffin tin or fill it with cupcake liners. Set aside. Peel, core, and dice the apples. Pour the lemon juice and maple syrup over the apples. Stir to coat.
In a medium-size bowl, mix your dry ingredients; flour, baking powder, ground cinnamon, ground nutmeg, baking soda, and salt. Mix until combined.
Add the pecans and the apples. Mix until they are all coated. Set aside. In a large mixing bowl, mix the yogurt, eggs, oil, brown sugar, and granulated sugar. Mix all ingredients until they are all incorporated.
Add the dry ingredients to the wet ingredients using a spatula. Stir only until combined. Don't overmix. Fill the muffin tin cavities 2/3 to 3/4 full using a 3 tablespoon-sized scoop.
Bake in the preheated oven for 15 to 17 minutes until nice and golden. When you insert a toothpick in the middle and comes out clean, they are ready.
