Raspberry Daiquiri Pie and Pudding

If you love a good Daiquiri and a  delicious creamy pie, you’re going to love this Raspberry Daiquiri Pie.   Don’t want to mess with a crust?  The filling makes a delicious pudding  dessert!

INGREDIENTS

– cream cheese softened to room temperature – sweetened condensed milk – frozen limeade concentrate thawed – light rum

STEP 1

In the bowl of an electric stand mixer, beat cream cheese until light and fluffy.

Add sweetened condensed milk, limeade, and preserves.  Beat until blended.  Add rum and mix thoroughly.

STEP 2

Fold in whipped topping and pour into pie crusts or pudding cups.  Chill for 4 to 6 hours until firm.

STEP 3

Garnish with whipped cream and raspberries if desired.

STEP 4

This pie is delicious frozen too! Instead of chilling just put it in the freezer. Let it sit out 10  to 15 minutes before cutting into the frozen daiquiri pie.
