Vanilla Nut Granola Recipe

Vanilla Nut Granola makes a convenient healthy snack when you’re on the go, or a great way to add fiber to your yogurt.

INGREDIENTS

– old-fashioned rolled oats not quick cook – raisins not packed – dried cranberries – ground cinnamon – chopped walnuts

STEP 1

Preheat oven to 300°F. Lightly spray a rimmed baking sheet with nonstick spray or line it with parchment paper.

In a large bowl, mix oats, pecans, walnuts, raisins, cranberries, brown sugar, flax seed and cinnamon.

STEP 2

Combine coconut oil and honey in small saucepan; bring to a simmer over medium heat. Remove from heat; stir in vanilla.

STEP 3

Pour hot liquid over oat mixture; stir well. Spread granola on prepared baking sheet. Bake for about 30 minutes, or until golden brown, stirring half way through cooking.

STEP 4

Transfer  sheet to a rack and let granola cool completely. (If it is not cooled  completely it will not clump – DO NOT SKIP THIS STEP!!) – Store in airtight container. Can be frozen.
