Ingredient Notes & Tips

Corned Beef Sliders Recipe Ingredients: Sliced corned beef, sauerkraut, Swiss cheese, Hawaiian bread rolls, ketchup, Dijon mustard, butter, poppyseeds, mayo, garlic powder, and onion powder. Hostess At Heart

Here are a few tips to help your corned beef sliders turn out perfect every time. The full ingredient list is in the recipe card below.

  • Swiss Cheese: Use baby Swiss cheese for a milder, creamier flavor, or regular Swiss for a bolder taste. Either way, adding cheese on both the bottom and top of the filling keeps the sliders from falling apart.
  • Sauerkraut: Drain it really well before adding it to the sliders. Too much liquid will make the rolls soggy. Give it a good squeeze in a paper towel if needed.
  • Corned Beef: Thinly-sliced corned beef works best here. It layers more evenly and makes the sliders easier to bite into. You can also pick up sliced corned beef at your deli counter.
  • Hawaiian Rolls: Do not substitute another bread! The slight sweetness of Hawaiian rolls is what makes this corned beef sliders recipe so special. It perfectly balances the salty beef and tangy kraut.
  • Homemade Thousand Island Dressing: Ketchup, mayo, garlic powder, and onion powder come together in minutes. This is way better than store-bought and adds so much flavor.
  • Seasoned Butter Topping: Softened butter mixed with stone Dijon mustard, poppy seeds, garlic powder, and onion powder is the secret finishing touch. Want a sweeter twist? Swap the stone Dijon for honey mustard.

How to Make Corned Beef Sliders on Hawaiian Rolls

  1. Preheat your oven to 350ยฐF. Line a 9ร—13 baking dish with parchment paper. This step is optional, but it makes cleanup so much easier and helps you lift the sliders out in one piece.
  1. Make the Thousand Island dressing. Whisk together the ketchup, mayonnaise, garlic powder, and onion powder in a small bowl. Set aside.
  1. Make the seasoned butter. Mix the softened butter, Dijon mustard, poppyseeds, garlic powder, and onion powder together in a bowl. Set aside.
  1. Slice the Hawaiian rolls in half like a hamburger bun, keeping them connected as a sheet. Place both halves cut-side up on a large plate or cutting board.

  1. Butter the inside of the rolls with the room-temperature butter. This adds flavor and helps prevent soggy bottoms.
  1. Layer the bottom half: Add 6 slices of Swiss cheese first, then pile on the corned beef, and spread the sauerkraut evenly on top.
  1. Drizzle the Thousand Island dressing over the sauerkraut, then add the remaining 6 slices of cheese.

  1. Place the top buns on and transfer everything to your prepared baking dish.

  1. Bake for 20-23 minutes, or until the cheese is melted and the tops are golden brown. Serve hot!

Pro tip: Cover the sliders loosely with foil for the first 15 minutes, then uncover for the last 5-8 minutes to get that beautiful golden top.

Recipe Variations

  • Make it spicy: Swap the stone Dijon for spicy brown mustard or add a few dashes of hot sauce to the Thousand Island dressing.
  • Make it deluxe: Replace the sauerkraut with caramelized onions and sautรฉed mushrooms for a richer, heartier version.
  • Honey mustard twist: Swap the honey mustard for Dijon in the butter topping for a sweeter flavor profile.
  • Cheese swap: Swap Swiss for provolone or Havarti if Swiss isnโ€™t your thing.
  • Use leftovers: These work great with leftover corned beef from your St. Patrickโ€™s Day dinner!

How to Store Corned Beef Sliders

Refrigerator: Store leftover corned beef sliders in an airtight container for up to 3 days.

Reheat: Place sliders in a baking dish, cover with foil, and warm in a 325ยฐF oven for 3-4 minutes. This keeps them from drying out. Avoid the microwave if you can โ€” it makes the rolls chewy.

Freezer: I donโ€™t recommend freezing these after baking, as the rolls become soggy when thawed. They are best made fresh or stored in the fridge for a couple of days.

How to Serve

Serve these corned beef sliders hot and fresh from the oven on a large platter or wooden board for a fun, casual presentation. They are perfect as a party appetizer, game day snack, or even a simple weeknight dinner alongside a bowl of tomato soup or a simple green salad.

For St. Patrickโ€™s Day, pair them with a Reuben dip, some kettle chips, and a cold green drink for a festive spread everyone will love!

Ingredients
ย
ย

  • 12 Hawaiian slider mini rolls
  • 2 tbsp butter room temperature
  • 12 slices Swiss cheese you can also use Baby Swiss for a less pronounced flavor
  • 1 cup sauerkraut drained
  • ยฝ lb sliced corned beef

Thousand Island Dressing

  • ยผ cup ketchup
  • ยผ cup mayonnaise
  • 1 tsp garlic powder
  • 1 tsp onion powder

Topping seasoned butter

  • 4 tbsp butter ยฝ stick butter
  • 1 tbsp ground stone Dijon mustard you can also use honey mustard for a sweeter flavor
  • 2 tsp poppyseeds
  • ยฝ tsp garlic powder
  • ยฝ tsp onion powder

Instructions
ย

  • Preheat the oven to 350 ยฐF.
  • Line a 9ร—13 baking dish with parchment paper. It is optional, but I highly recommend it. It will help take the sliders out of the baking dish before serving, and make for easy cleanup.
  • Make the Thousand Island dressing: In a small mixing bowl, whisk the ketchup, mayonnaise, garlic powder, and onion powder. Mix until all ingredients are combined. Set aside.
  • Make the seasoned butter: In a mixing bowl, add the butter, Dijon mustard, poppyseed, garlic powder, and onion powder. Mix well. Set aside.
  • Slice the Hawaiian rolls like you would slice a hamburger bun.
  • Place on a large plate, cut side up, and butter the inside of the rolls.
  • On the bottom part of the roll,s add 6 slices of cheese.
  • Add the sliced corned beef on top of the cheese.
  • Add the sauerkraut evenly on top of the corned beef.
  • Drizzle the Thousand Island dressing on top of the sauerkraut
  • Add the remaining 6 slices of cheese and place the top part of the buns on top.
  • Place the sliders into the prepared baking dish.
  • Butter the top part of the buns with the seasoned butter.
  • Bake in the preheated oven for 20-23 minutes or until the cheese is melted to your liking.

Notes

  • Slice cheese: You can substitute the Swiss cheese with baby Swiss cheese. Baby Swiss cheese is milder and creamier than regular Swiss.
  • Sauerkraut: Be sure to drain the sauerkraut thoroughly to prevent excess moisture and soggy sliders.
  • Corned beef: I prefer using thin-sliced corned beef, as it makes the sliders more even and easier to bite. You can also use Deli corned beef
  • Hawaiian rolls will add the right amount of sweetness, which is a perfect balance between the corned beef and sauerkraut.
I add cheese on both sides of the filling, so it helps keep the sandwich together.
Storage: Keep in the refrigerator for up to 3 days.
Reheat: Place in a preheated oven at 325 degrees F, covered for 3-4 minutes.
Serve at a party, on a platter/tray for your next get together, as a quick appetizer, or make it the star of dinner with other fun finger food.
