It hasn’t sunk in yet because I haven’t entered the panic mode yet. I think it’s more like I’m in denial. Just thinking about these Orange Cup Sweet Potatoes gets me in the mood.

I always host my husbands’ family for Thanksgiving. The family is growing, and the dynamics have changed. Our children are having children. That is what holidays are about. Enjoying family and appreciating family members while you can.

My mother-in-law used to host most of the holidays but has passed the culinary torch to me and my sister-in-law. She gave me this cookbook recently. This cookbook was produced as a fundraiser and is a compilation of recipes by the best professional and at-home cooks in Omaha. That’s what it claims anyway. I recently made this “Orange Cup Sweet Potato” recipe. It was delicious and the oranges provided a nice bright sweetness to the sweet potatoes. There isn’t anything difficult about this recipe and would be perfect for a smaller Thanksgiving gathering.

Ingredients
  

  • 3 navel oranges halved

  • 2 cans sweet potatoes drained (15 oz each)

  • 1/2 cup heavy cream

  • 1/2 teaspoon salt

  • 1 tablespoon brown sugar packed

  • 2 cups miniature marshmallows

Instructions
 

  • Preheat oven to 350 degrees F.  
  • Working over a bowl, remove all pulp, membrane and juice from each orange using a grapefruit knife. Discard membrane. Arrange the orange cups in a cupcake pan or a 9x13-inch baking dish.
  • In a medium bowl, mash sweet potatoes and add cream, salt, and brown sugar. Stir to combine. Stir in reserved orange pulp and juices and blend well.
  • Fill orange cups with mixture, and top with marshmallows pressed into the potatoes.
  • Bake for 20 minutes until heated through and browned.


Notes

I had leftover filling. You could easily put this filling in a casserole dish and bake it without using the orange cups. You could also add chopped pecans to the top.

  3. I just had a discussion the other week pre and against marshmallows when it comes to sweet potatoes! I had never heard of it until then but looking at yours here, it does seem to make so much sense!
    We don’t celebrate Thanksgiving but I wills ave this recipe for Christmas! ๐Ÿ™‚

  7. These look really yummy. We don’t celebrate Thanksgiving here in the UK of course, but I do enjoy all the related foods still! I was in the US for it last year and it was so much fun to celebrate it, going to miss it this year though. I hope you have a great one Julie!

  9. Oh my goodness, it took me a few seconds to realize they are actually baked in orange halves!!! Brilliant! I really like the combination of orange with the sweet potato; I bet that tastes awesome!

Good luck with your Thanksgiving feast, I just love this time of the year with all that warmth and goodness that we share with one another. This year though, we are taking a week off for Thanksgiving and heading somewhere warm with our adult children – Puerto Rico is the destination of choice, I just hope we find turkey and stuffing somewhere :). Love your last line “families get along better with wine”.. ha ha! So, so true!!!
