Ingredient Notes and Tips

Choosing the Right Avocados: Haas avocados are perfect for guacamole because they’re creamy and have a rich, nutty flavor. Look for avocados that give slightly when you press them but aren’t mushy. If your avocados are too firm, let them sit on the counter for a day or two. We keep them pretty chunky because they’ll be mashed with the other ingredients.

Lime Juice is Key: Fresh lime juice not only adds amazing flavor but also helps keep your guacamole from turning brown. Bottled lime juice will not give you the same fresh taste. The amount of lime you use is really up to you. Add the amount recommended and taste the guacamole once everything is mixed together. Add a little more if needed.

Taming the Onion: Our secret trick is mixing the diced onion with lime juice first. This takes away some of the sharp bite and makes the onion taste milder and sweeter.

Jalapeno Peppers: Most of the time I leave them out. If you don’t know who you’re serving, keep the flavor fresh and mild. If you do use them, remove the seeds and ribs which is were the intense heat resides.

Cilantro Love: We use more cilantro than most recipes because we love that fresh, bright flavor. Start with ½ cup and add more if you’re a cilantro fan like us!

Salt to Taste: We adjust the salt as we make it instead of just at the end. Always taste your guacamole before serving and add more salt if needed. The salt really brings out all the other flavors.

Delicious Variations to Try

Spicy Guacamole: Add a whole jalapeno instead of half, or try adding a pinch of cayenne pepper for extra heat.

Smoky Guacamole: Mix in a chipotle pepper in adobo sauce (finely chopped) for a smoky, spicy kick.

How to Prep Your Avocados

Here’s the easiest way to get perfect avocado chunks every time. First, slice the avocado in half lengthwise around the seed. Twist the two halves apart. To remove the seed, carefully tap it with the blade of your knife so the knife gets stuck in the seed, then twist and lift it out. Now for the flesh – take a large spoon and scoop it out in one piece by running the spoon between the flesh and the skin. How to Store Your Guacamole

Fresh guacamole tastes best when eaten right away, but you can store leftovers in the fridge for up to 2 days. Press plastic wrap directly onto the surface of the guacamole to prevent air from getting to it – this helps prevent browning. You can also put the avocado pit back in the guacamole, which some people say helps keep it fresh longer.

If your guacamole does turn a little brown on top, just scrape off that layer and the green guacamole underneath will still taste great!

Ingredients
 
 

  • 4 avocados We prefer Haas
  • 3 roma tomatoes seeded and diced
  • 1 red onion diced
  • 1 lime
  • ½ cup cilantro chopped
  • ½ tsp kosher salt
  • 1 clove garlic minced
  • ½ jalapeno seeded and finely diced (optional)

Instructions
 

  • Optionally, I will combine the diced onion with the lime juice in a separate bowl before mixing it with the other ingredients. Doing this will take out the intense heat from the onion making it milder.
  • Slice the avocados in half. Remove the seed and scoop out the flesh into a large bowl. Use a fork or potato masher and break them up into chunks.
  • Add the diced tomato, onion with the lime juice, garlic, and jalapeno if using it, to the avocados. Stir and add salt and additional lime juice according to taste.
  • Fold in the cilantro and serve.

Notes

We prefer to add the onion to the lime juice, which helps remove some of the intensity of the onion.
We also prefer using more cilantro than the average person. Adjust to your liking.
Chunky guacamole is easy to eat and visually appealing. You can mash it up to make it creamy if that’s what you prefer.
