Crispy Parmesan Roasted Potatoes: The Ultimate Easy Side Dish

If your family is like mine, potatoes make the perfect side dish. Especially when theyโre crispy on the outside, fluffy on the inside, and absolutely bursting with cheesy flavor, these Crispy Parmesan Roasted Potatoes have been our familyโs go-to side dish for years, and once you try them, youโll understand why!

What makes these potatoes so special? Theyโre incredibly easy to make (just 10 minutes of prep!), they pair with absolutely everything from weeknight chicken dinners to holiday roasts, and that golden parmesan crust creates the most amazing crunch youโve ever heard. Plus, theyโre made with simple ingredients you probably already have in your kitchen right now.
Why This Recipe is a Total Game-Changer
I stumbled upon this recipe years ago when delving into my motherโs recipe box. I discovered that coating the potatoes in flour and parmesan before roasting creates this incredible crispy shell that locks in all the fluffy goodness inside.
What makes this recipe so much better than regular roasted potatoes is that flour-and-cheese coating trick. It creates a golden, crunchy crust thatโs way more exciting than plain potato skin. And since we roast them in the oven, theyโre hands-off cooking โ perfect for busy weeknights when you need something delicious but donโt want to babysit your side dish.
Key Ingredient Notes
While youโll find the complete ingredient list in the recipe card below, let me share some insider tips about the star players:

- Russet or Yukon Gold Potatoes: These high-starch varieties give you that perfect fluffy inside and crispy outside combo. Russets are my top choice because they get incredibly fluffy, but Yukon Golds work great too and have a naturally buttery flavor. Skip the red potatoes for this recipe โ they donโt get as crispy due to their lower starch content.
- Grated Parmesan Cheese: I always use freshly grated Parmigiano-Reggiano when possible because it melts better and has more flavor, but the pre-grated stuff from the store works perfectly fine too. Just avoid the powdery kind in the green container โ it wonโt give you that golden crust weโre after.
- All-Purpose Flour: This is the secret weapon that creates the crispy coating! The flour helps the parmesan stick to the potatoes and creates that amazing crunch when it roasts.
- Real Butter: I always use real butter because it browns beautifully in the oven and adds incredible flavor. You can substitute with olive oil if needed, but butter gives the best taste and color.
Pro Tips for Perfect Crispy Potatoes Every Time
After making these potatoes hundreds of times, here are my tried-and-true secrets for success:
Shake potatoes in dry mix
Drizzle with Butter
Bake
- Donโt Skip the Rinse: After cutting your potatoes, rinse them in cold water and pat them completely dry. This removes excess starch and helps them get extra crispy. Wet potatoes will steam instead of roast!
- Size Matters: Cut your potatoes into roughly 2-inch pieces. This gives you lots of surface area for that crispy coating while making sure the inside cooks through perfectly. Too small and theyโll dry out, too big and the insides wonโt cook properly.
- Use a Large Baking Dish: Donโt crowd your potatoes! They should fit in a single layer with space between each piece. Overcrowded potatoes will steam and wonโt get crispy. I use a 9ร13 baking dish for most batches.
- Flip Halfway Through: This ensures even browning on all sides. Use a fish spatula or thin turner to gently flip them without losing that precious coating.
- Check for Doneness: Theyโre ready when theyโre golden brown and crispy on the outside and a fork easily pierces the center. Usually takes about 45 minutes at 425ยฐF.
Serving Suggestions
These versatile potatoes go with practically everything! Theyโre amazing alongside roasted chicken, hamburger steak, pork chops, or baked salmon. For a complete comfort food dinner, serve them with my Easy Meatloaf and some roasted beets.
If youโre hosting a dinner party, these potatoes are perfect because they look fancy but are actually super simple to make. I like to transfer them to a nice serving bowl and sprinkle fresh chopped parsley on top for a pop of color.
For holiday meals, they make an excellent alternative to mashed potatoes and are much easier to make for a crowd. Just double the recipe and use two baking dishes!

Storage and Leftovers
These potatoes are definitely best served fresh from the oven when theyโre at their crispiest, but leftovers will keep in the fridge for up to 3 days in an airtight container.
To reheat and get them crispy again, spread them on a baking sheet and pop them in a 400ยฐF oven for about 10-12 minutes. Donโt use the microwave โ itโll make them soggy! You can also reheat them in an air fryer at 375ยฐF for 5-6 minutes.
If you want to prep ahead for a big dinner, you can cut and rinse the potatoes up to 4 hours ahead of time. Just store them in cold water in the fridge, then drain and pat dry before coating and roasting.
Delicious Variations to Try
- Herb Parmesan Potatoes: Add 1 teaspoon of dried Italian seasoning or herbs de Provence to the flour mixture for extra flavor.
- Garlic Loverโs Version: Mix 2 cloves of minced garlic into the melted butter before drizzling over the potatoes.
- Spicy Kick: Add a pinch of cayenne pepper or red pepper flakes to the flour mixture for some heat.
- Cheesy Blend: Use half parmesan and half sharp cheddar cheese for a different flavor profile.
- Rosemary Potatoes: Sprinkle fresh chopped rosemary over the potatoes before roasting for an elegant touch.

This recipe is incredible. The crip outsides were the star. Trying to figure out how to make them with more chrisp! maybe I should cut them smaller next time? Very delicious. thank you.
Thank you, Carol. We love this easy side dish too. To make sure they’re crispy, don’t crowd them in the pan, try to get the melted butter on each of them so if you cut them smaller that might help, lastly, don’t move them in the pan until they’re crispy. I hope this helps and that you will let me know your experience next time you make them.
This is a delightfully different take from my normal method … can’t wait to try them!
Thank you, Ann!
