This Balsamic Chicken Sandwich combines a sweet balsamic glazed chicken breast, avocado, and tomato, all piled high on a tasty bun.

Equipment Needed to Make The Balsamic Chicken Recipe

Ingredients: lime, balsamic vinegar, chicken breast, garlic, olive oil, rosemary, brown sugar, lettuce, avocado, buns, tomato.

Ingredients for the Balsamic Chicken Sandwich Recipe

  • Boneless Skinless Chicken Breasts. I used a chicken breast but balsamic chicken thighs would also be delicious.
  • Balsamic Vinegar. A good quality does make a difference. This is what gives this sandwich it’s classic flavor.
  • Garlic Cloves. I like to keep a head or two of garlic in my kitchen. We love garlic!
  • Rosemary. Make sure your spice is not expired.
  • Olive Oil. A flavored oil for cooking.
  • Brown Sugar. Light or dark brown will both work.
  • Salt and Pepper. To taste for seasoning.
  • Buns. Use either brioche buns or pretzel buns. Both would be perfect.
  • Lettuce. Any kind of lettuce will work. Green Leaf lettuce is pictured. You could also use arugula.
  • Tomatoes. Sliced tomatoes from a farmer’s market make all the difference.
  • Avocados. Make sure to buy ripe avocados or buy them ahead of time so they have time to ripen.
  • Lime Juice. You can use bottled juice or freshly squeezed for this recipe.

How to Make a Balsamic Chicken Sandwich

Step One: Prepare your pan.

Spray a baking dish with non-stick cooking spray.

Step Two: Pound your chicken.

You want it 1/2″ or less in thickness.

Step Three: Combine the Balsamic chicken marinade ingredients.

Pour over chicken. Marinate for at least one hour.

Step Four: Bake or grill the Chicken.

Step Five: Prepare Toppings and Serve.

Yes. You can freeze the balsamic chicken in an airtight container for up to three months and thaw it to use in sandwiches as needed. Or, make another meal by slicing the chicken over a delicious salad.

How To Reheat Balsamic Chicken

Place your chicken in the microwave for thirty to sixty seconds. Repeat until heated through to 165ºF.

Tips to Make the Perfect Balsamic Chicken

I mash the avocado because the other ingredients seem to slide off of sliced avocados.

If you don’t want to heat up your kitchen, throw the marinated chicken breasts on the grill for roughly seven minutes per side. Your goal temperature is 165ºF.

Because this marinade contains brown sugar, watch that the chicken doesn’t burn.

Ingredients
  

  • 6 chicken breasts 5 oz. boneless and skinless
  • 1/4 cup balsamic vinegar
  • 2 garlic cloves minced
  • 1 1/2 tbsp rosemary chopped
  • 2 tbsp olive oil
  • 1 tbsp brown sugar
  • 1/4 tsp salt
  • 1 pinch Black pepper
  • 6 buns
  • 6 slices Lettuce
  • 2 tomatoes
  • 2 avocados
  • 1 tbsp lime juice

Instructions
 

  • Spray a 9X13 baking dish with nonstick cooking spray.
  • Put each chicken breast between two pieces of wax paper and pound until they are the same thickness, approximately 1/2 inch. Place chicken into the prepared dish.
  • Combine balsamic vinegar, olive oil, garlic, rosemary, brown sugar, salt and pepper. Pour over chicken. Cover with plastic wrap and refrigerate for 1 hour or overnight.
  • Preheat the oven to 350 degrees F.
  • Remove plastic wrap from chicken and bake uncovered in the marinade for 30 minutes or until chicken registers done. Spoon marinade over chicken after 15 minutes in the oven.
  • Mash avocado with lime juice and a pinch of salt. Spread on both sides of the bun. Layer avocado with lettuce, chicken and tomato. Spoon balsamic juice over sandwich ingredients. Serve immediately.

    This looks absolutely delicious! Don’t some of the best recipes come from the need to improvise? I love that you turned the pretzels into buns. I bet they’d taste amazing as burger buns too!

    1. Thank you! It was a very happy accident. My husband can do just about anything on this contraption because you can control the heat and do indirect or direct cooking.

          1. I was thinking of the green egg thing – my daughter and son in law just bought their first house. He does a lot of smoking (they live in Georgia) and has a great set up, but it would be nice to have just a regular grill, too. Actually, I’m needing a new grill, myself! My old one is 17 years old and pretty much giving up the ghost! I’ve heard people online just raving about these green eggs!

            I just don’t grill that much – especially now that the kids are pretty much gone. Then I taste something grilled at a friends (or smell the neighbors) and I’m like, ah, yes, now I remember why you grill!

          2. These grills are great but my husband is the expert. They take lump charcoal that must be started before you want to grill and then he knows what to shut down where to adjust the temp. I love grilled food, but if it was me, I would either just get a small charcoal grill or an electric grill. We replaced a very old grill too. I am hoping we get close to the same life out of tis one as we did the last one.

          3. I didn’t know that about the lump charcoal! I’m not even sure if I want to mess with charcoal of any kind! I’m leaning toward a small gas grill for me. We’ll see! Thanks for the advice!
